One of Washington's most anticipated winter openings is happening a bit earlier than anticipated (compared to recent estimates, anyway). China Chilcano, José Andrés' long-awaited interpretation of Peruvian cuisine, was supposed to open on January 7, but construction moved a little quicker than anticipated and now Monday is the opening date. Eater will have a full gallery tour of the space Monday, but here's a sneak peek inside.

Reservations are currently available online on China Chilcano's website for dinner on Monday.
The menu for the Penn Quarter restaurant isn't quite finalized yet, but expect dishes that emphasize Chinese, Japanese and native Criollo influences in Peruvian cuisine, a ceviche bar, dim sum offerings, and one of the U.S.'s most expansive pisco programs.
