Chef Rodney Scruggs immediately knew what he wanted to do for an Eater Classics Week special when the site reached out to him: Oysters Rockefeller.
The Occidental (which was just named D.C.'s most iconic restaurant by Thrillist) will offer four oysters for $10. They're using War Shore Cannon Coves Oysters and preparing them with tricolor kale, minced fennel and shallots, pancetta, espellette crumbs and a Catoctin Creek Mosby Spirits and salsify cream.
Scruggs says the dish is indicative of both his own style and his restaurant's. "With the Occidental dating back to 1906, we try to take what is old and make it new again or relevant again," he said.
