Bluebird Bakery is currently raising money for their own location on EquityEats, and on Sunday, January 25 from 8 a.m. to 11 a.m., the bakery will stage a pop-up shop at After Peacock Room in Georgetown.
Helmed by pastry chefs Tom Wellings and Camila Arango, the plan for the pop-up involves serving sweets like almond croissants, Pain au chocolat, Meyer lemon and poppy seed tea cake, and pistachio madeleines. Savory items include Prosciutto di Parma and mozzarella croissant sandwiches and fresh buffalo ricotta, toasted walnuts, pear and honey tartines. There will be Amedei hot chocolate too.
