Guinea pig isn't on the menu (yet), but diners can experience everything from lamb pot stickers to lomo saltado at t José Andrés' new Penn Quarter spot.
China Chilcano's menu is divided into such sections as dim sum, salads and vegetables, chaufas and tallarines (rice and noodles), "The Chinese Connection," "Peruvian to the Bone," soups, salsas and ceviches. The restaurant melds Peruvian, Chinese and Japanese cuisine (all of which have influenced Peru's cuisine).
Menu items range from $2-$22; most are small plates. China Chilcano opened Monday.
