The Fairmont Will Get a New, Splashy Restaurant in 2016

The Fairmont will get a new restaurant as part of a multi-million dollar renovation slated for the hotel.

The company plans to put about $27 million into the hotel overall, with about $4 million devoted to the hotel's restaurant. They're still in the very early planning stages, but the hotel's restaurant, Juniper, will transform into what they hope will be a destination restaurant that will bring in customers beyond hotel guests. They'll revamp the restaurant's outdoor courtyard with new touches like fire pits, too.

The hotel will first renovate its guest rooms before anything's done on the dining end. The restaurant revamp is part of the second phase of the overall renovation, and will likely kick off in the spring of next year, according to general manager Shane Krige. The hotel plans to revamp its catering offerings as well.

Meanwhile, Juniper recently partnered with District Doughnuts to create honey doughnuts made from the honey the restaurant cultivates on the hotel's rooftop.
