Take a Look at Sushiko's Vegan Omakase Menu

Sushiko is introducing an omakase menu particularly aimed at vegans. The tasting menu is $80 per person. The menu, which highlights both sushi and non-sushi Japanese dishes and ingredients, is available starting this Thursday, and requires 48 hours advanced notice to book. Like the restaurant's traditional omakase menus, it will be served at the sushi bar. The menu is below; take a look:

First course

ohitashi

bamboo shoots, wakame, kombu dashi jelly

Second course

suimono

matsutake, yuba, mitsuba, kombu dashi

Third course

agemono

brussel sprouts, ichimi togarashi, ginger caramel

Fourth course

mushimono

house-made tofu, asparagus, black seaweed caviar, tamari soy

Fifth course

yakimono

nama-fu, dengaku shiro miso, dengaku aka miso

Sixth course

sunomono

Japanese cucumber, burgundy truffle, watermelon radish, beet,

cherry tomato, olive, tosazu

Seventh course

shokuji

somen, umeboshi, shiitake mushroom, myoga, kaiware, kombu dashi

Eighth course

yasai sushi
