Massimo Fabbri has decided to concentrate on running the kitchen at Posto full-time. So the chef has promoted Matteo Venini to head up the kitchen at sister retaurant Tosca.
Venini, previously chef de cuisine, has been given full rein of the menu, according to a press release. He'll highlight game meats, fish and fresh pastas at the downtown Italian restaurant.
Some former dishes remain on the menu but have been tweaked in some way (for example, the restaurant's rabbit dish now uses a different shape of pasta). The restaurant also underwent some interior renovations. Tosca offers both tasting menu and a la carte dishes.
