Minibar's executive sous chef is leaving the restaurant to study in Spain.
Johnny Spero had his last service at the restaurant Saturday, Tim Carman reports. His next move will be to stage at the renowned Mugaritz from chef Andoni Luis Aduriz near San Sebastian.
ThinkFoodGroup has not yet finalized a replacement for Spero; right now creative director Ruben Garcia will fill in at Minibar.
Spero spent almost two years at the ambitious José Andrés restaurant, devoted to molecular gastronomy. He was Eater's Chef of the Year in 2014.
