Pastry chef Naomi Gallego has added another new pastry to Blue Duck Tavern's menu. The strawberry rhubarb kolache is available for $7 during brunch on Saturday and Sunday.
The danish-like pastry with Czech roots is beloved in Texas. Gallego hails from San Antonio, but her strawberry rhubarb filling isn't really traditional. The most common sweet flavors are poppy seed, apricot and prune.
The pastry was nearly impossible to find in D.C. until this year. Republic Kolache Co. recently hosted kolache pop-ups and also met a Kickstarter goal to open a bakery.
