Brittany Frick is back at Doi Moi, taking over the position of chef de cuisine.
Frick helped open the 14th Street restaurant back in 2013, but left to tackle other personal projects. Right around the time she began wondering whether she made the right decision, she got a phone call saying that the chef de cuisine position was open, asking her to return.
"I just love Thai food and Vietnamese food; I crave it all the time and I enjoy working with that food," she said. "The whole Doi Moi and Estadio group, they're part of my family."
In her role, Frick wants to make the Doi Moi experience more family-style, encouraging diners to share and try multiple things. "I don't like seeing people ordering an appetizer and an entree and that's it," she said. "We want to make things more down-to-earth, more communal."
Frick says she'll strive to keep the menu at Doi Moi balanced between Vietnamese and Thai offerings. She leans more towards Thai food personally, but with a sous chef who happens to be from Thailand and a junior sous chef who is Vietnamese, she thinks her team will find the right mix of dishes. Expect more Thai drinking snacks and nam phrik dipping sauces at Doi Moi under her watch.
