D.C. Really, Really Likes Kolaches — Lines Stretch Down the Street for Pop-Up

Demand for kolaches, Texas's beloved pastry, is high in D.C.

Republic Kolache sold out of the 700 kolaches it had prepared for its pop-up event at American Company Saturday in about two hours. About 100 people had to be turned away, according to co-founder Chris Svetlik. People started lining up at 9 a.m. for the 10 a.m. event, with lines traveling up Vermont Ave. NW.

The pop-up returns next week, and Svetlik says the plan is to ramp up production to help accommodate the demand. They'll offer a vegetarian savory option (a Tex-Mex take on saag paneer is how he describes it) and are eventually planning to do a guest chef collaboration series.
