In the fourth dinner of our Chef Meets Brewer series, Eater and Goose Island took over Tico for a six-course feast full of flavor. Goose Island Brewer Tim Faith perfectly paired six brews with custom creations from Tico's Chef George Rodrigues. Guests were taken through a huge range of flavors including tamarind-glazed pork ribs with jicama and sweet chiles paired with Goose Island Matilda, pan-seared hake with swiss chard, parsnip puree and roasted fingerling potatoes paired with Goose Island Autumn Ale and goat's milk cheesecake with fresh blackberries and blackberry lime compote paired with Goose Island Juilet.
