EatWell DC is Marketing The Bird as a 'Beak to Toe' Restaurant

Five things to know about the new poultry-focused place coming to Shaw.

News broke late last year that the next project for EatWell DC would be called The Bird, and focus on poultry at 1337 11th St. NW. Here are five more things to know about The Bird, courtesy of a press release with further details:

*The restaurant group is marketing the place as a "Beak to Toe" restaurant, which means it will serve all parts of the bird, as well as vegetables grown on the company's farm, craft cocktails, beers and wine.

*The 3,100 square foot space will have seating for 75, 11 bar stools and outdoor seating. All of it will be divided into six separate spaces designed differently with touches from local artists.

*The Pig's Michael Bonk will design the menu. Some of the birds he'll incorporate: chicken, capon, duck, quail, turkey, squab, grouse, goose and ostrich.

*They'll offer a separate bar menu, as well as dinner and weekend brunch.

*Late summer is the target for opening.
