Angel Franco is the new executive chef at Compass Rose.
Franco recently worked at such restaurants as Minibar and Maketto, as well as Jose Andres' Mi Casa in Puerto Rico (the chef is Puerto Rican as well). He replaces Sam Molavi, who headed over to Ripple last month.
Under Franco, the international restaurant is expanding its Bedouin Tent offerings. In addition to its Moroccan prix fixe menu, they'll offer two seatings Friday-Monday of a new "Tour of the World" option. It's a curated selection from the restaurant's main menu in the same space that's tailored to individual groups. More info here.
