NATIONAL MALL— Carla Hall told Eater last summer about her upcoming project inside Smithsonian's African American History Museum. Washington Post now has more details on the North Star Cafe set to open in September. It will have stations dedicated to four different culinary regions. Expect historical dishes updated for the modern palate like buttermilk fried chicken with black-pepper cornmeal waffles, Brunswick stew, Philadelphia-style pepper pot stew, an oyster pan roast, and much more. ARLINGTON— Chef Tim Ma is officially out of the kitchen at Water & Wall now that Kyirisan is open, according to Northern Virginia Magazine. John Leavitt  (most recently of Provision No. 14 and 2941) is taking the helm as chef. Ma still retains ownership of the restaurant. [NoVa]

GEORGETOWN— Jetties recently launched some new seasonal specials, and the popular Summer House sandwich is back on the menu. It comes with heirloom tomatoes, sprouts, pepper jack cheese, sliced avocado, basil mayo, and celery salt, all served on toasted multigrain bread. [EaterWire]
