Today's the day. Anxo Cidery & Pintxos Bar is finally opening at 300 Florida Ave. NW in Shaw. The project is from Sam Fitz, Rachel Fitz, Tim Prendergast, Cooper Sheehan, and chef Alex Vallcorba.

Anxo has hosted various pop-ups since the restaurant opening was announced over a year ago. Now it has a permanent home complete with exposed brick and wooden finishes (take a peek at the interior here). The name comes from the nickname for Basajuan, a creature from Basque mythology.

The menu will feature Spanish cheeses, ham, and bite-size pintxos (Basque tapas) like salt cod fitters, marinated mussels, and Spanish tortilla. Also find larger dishes meant for sharing like cider poached octopus, rockfish escabeche, roasted quail, and fried pig ears.

Cider is at the heart of Anxo's beverage program, so they're collaborating with Millstone Cellars to produce their own. The restaurant will also offer a selection of 20 different draft ciders (from both local and international makers) poured through a custom-built draft system. About 16 draft lines will be dedicated to beer and cocktails, and they'll also offer some lesser-known wines from the Basque Country and surrounding regions.
