Toli Moli will stick around past the summer and is now a permanent fixture at Union Market.

Burmese cold noodle salads are new additions to the lineup, now that the pop-up vendor has a permanent lease. To celebrate, Toli Moli will give away 50 snack-size servings to guests this Sunday, Aug. 21. They'll continue to offer their falooda dessert concoctions at the stand as well.

Smoky Eggplant and Udon is a stewed eggplant in turmeric, paprika, onion concoction, while Noodle and Tofu and Thin Noodle is lightly pan-fried ground tofu with black bean and garlic paste, white cabbage, seasonal vegetables, and more.

Chef Jocelyn Law-Yone says the new additions, which hit the menu on Aug. 30, are in response to customers wanting more of a savory staple to order. In Burma, there are hundreds of varieties of cold or room temperature noodle salads for snacks or meals, with a centerpiece ingredient being chickpea flour.
