Bartender shuffles

Sommelier Sarah Ruiz will be heading up the bar program at Dirty Habit, the upcoming "apocalyptic" replacement to Poste in the Hotel Monaco. She’ll develop cocktails to go with food from chef Kyoo Eom (who also cooked at Poste). The bartender, who comes here from San Francisco, is planning drinks like the sherry and walnut bitters-spiked Seeing Spots and the Matcha Picchu, which combines pisxco, falernum, guava, citrus, and (not shocking) matcha.

Sushiko is making some upgrades to its sushi bar. The good news: The restaurant won’t close during the construction. The rub: there won’t be any sushi to be had over the next two weeks or so of work. So it's teriyaki time.
