The BLT is an iconic sandwich. Though as with many icons, restaurants will seek to create variations. Many local restaurants have started to eschew ripe red tomatoes for tarter green ones — which often is both a better counterpoint to the fattiness of the bacon, and more available year round. Other variations are not in sandwich form, others use another form of pork belly, and some combine the BLT with another sandwich or serve it on less than typical bread.
Regardless of how it's delivered, the classic combination of pork, lettuce and tomato is a favorite at these places all over town.
