Pimento cheese is a beloved part of Southern cuisine. It usually features a sharp cheddar or processed cheese like American or Velveeta combined with mayonnaise, pimentos, salt, and pepper. It's also not uncommon to spice it with Worcestershire sauce, Tabasco, or jalapeños.
Though pimento cheese is commonly served as a spread on crackers or chips, it's making its way on to sandwiches and burgers around town. It's easy to find pimento cheese in one of the many new Southern restaurants cropping up around D.C.
