Pretzel buns have been growing in popularity over the last several years. With big chains like Wendy's, Sonic Drive-In, Ruby Tuesday, and Little Caesar's incorporating pretzel bread into menu items, it makes sense to see it at other establishments here in D.C.

Pretzels get their signature color and crustiness from a brief bath containing lye or baking soda. It increases the amino acids and sugar available to undergo the Maillard reaction, which is often known as the browning process.

The crustiness and density of the bread helps stand up against a barrage of heavy toppings without adding too much chewiness. Check it out at these local restaurants, among others.
